     No-Egg Applesauce Cake

Ingredients
1/2 cup low-fat margarine(40%corn oil), softened
1 cup sugar
2 cups all-purpose flour
2 teaspoons soda dissolved in 1 teaspoon lemon juice
1-1/2 teaspoons cinnamon
1/2 teaspoons cloves
1-1/2 cups unsweetened applesauce
1/2 cup raisins
 

Instructions
In a mixing bowl, cream margarine and sugar until fluffy. Combine flour, baking soda, cinnamon and cloves; add alternately to creamed mixture with applesauce. Beat on low until well blended. Stir in raisins. Pour into a 9-inch square baking pan that has been coated with nonstick cooking spray. Bake at 350F for 35-40 minutes or until a wooden pick comes out clean. Cool on a wire rack.
One serving equals 247 calories, 83 mg sodium, 0 cholesterol, 43gm carbohydrate, 3gm protein, 8gm fat.
