Brown ground beef in skillet, drain. Add 1/2 the enchilada sauce, 1/2 the salsa and diced onion. Let simmer for approximately 10 minutes.
Spoon beef mixture into center of tortilla and sprinkle cheddar cheese over top.
Spray 9x13 pan/baking dish with cooking spray. Roll up tortilla and place enchiladas side by side in dish. Pour remainder of enchilada sauce and salsa over top and sprinkle with mozzarella cheese. Bake for 20 minutes. Serve hot and top with sour cream if desired.
