     Mom's Vegetarian Lasagna

Ingredients
10 lasagna noodles
2 cups sliced mushrooms
1 cup grated carrot
1 lb spinach
1/2 cup chopped onion
1 tbsp oil
15 oz can tomato sauce
6 oz can tomato paste
1/2 cup chopped olives
 
1 1/2 tsp oregano
2 cups cottage cheese
12 oz monterey jack sliced

Instructions
Cook noodles. Drain & let cool. Rinse spinach, drain & steam 3-5 minutes.
In saucepan, cook mushrooms, onions & carrots in hot oil until tender. Stir in tomato paste, tomato sauce, olives and oregano.
In a greased 13x9, layer 1/2 of noodles, cottage cheese, spinach, MJ cheese & sauce. Repeat layers reserving MJ slices for the top.
Bake for 30 minutes at 375 degrees.
