     Potato & Corn Chowder

Ingredients
1 tbsp oil
1 med onion
water
14 oz can chicken broth
8 oz potato diced (or more)
2 cups corn
1/2 cup light cream
1/4 tsp pepper
2 tbsp parsley
 

Instructions
Cook onion in oil until tender. Add water to chicken broth to equal 3 cups. Pour into pan.
Add potatos - bring to a boil. Lower heat, cover, simmer 15 minutes.
Add corn - cook 3-5 minutes until corn is tender
Add cream, pepper, parsley & heat to serving temp
