1 tbsp oil
|

1 med onion
|

water
|
|
14 oz can chicken broth
|
|
8 oz potato diced (or more)
|
|
2 cups corn
|
|
1/2 cup light cream
|

1/4 tsp pepper
|

2 tbsp parsley
|

Instructions |
|
|
Cook onion in oil until tender.
Add water to chicken broth to equal 3 cups. Pour into pan.
|
|
|
Add potatos - bring to a boil.
Lower heat, cover, simmer 15 minutes.
|
|
|
Add corn - cook 3-5 minutes until corn is tender
|
|
|
Add cream, pepper, parsley & heat to serving temp
|
