12.5 oz cake flour
|

1 tsp baking soda
|
|
2 tsp baking powder
|
|
heavy pinch salt
|
|
1 cup sugar
|
|
1/2 cup vegetable oil
|
|
1 egg
|
|
1 cup yogurt
|
|
1 1/2 cup blueberries
|
|
|

|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Preheat oven to 380 degrees
Sift together flour, baking soda, baking powder & salt
|
|
|
In seperate bowl whisk together sugar, oil, egg & yogurt.
Add dry ingredients, reserving 1 tbsp (toss w/ blueberries)
|
|
|
Stir for 10 seconds. Add 1 cup blueberries, stir 3 more times.
Add mixture to muffin tins
|
|
|
Sprinkle 1/2 cup blueberries to the top and gently press down.
place in oven, increase to 400 degrees.
20-25 minutes, rotate pan 1/2 way through
