     Easy Sweet Potato Fritters

1 Cup flour
1 Tsp. baking powder
1/4 Tsp. salt
1/4 Cup milk
2 Eggs, beaten
2 Tbsp. butter or margarine, melted
2 Cups shredded raw sweet potato
4 Slices bacon, cooked and crumbled
Vegetable oil
Syrup (optional)

Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well.
Heat 3 to 4 inches of oil to 375F in a Dutch oven. Carefully drop batter by rounded teaspoonfuls into hot oil. Cook only a few at a time. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired.
