Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well.
Heat 3 to 4 inches of oil to 375ºF in a Dutch oven. Carefully drop batter by rounded teaspoonfuls into hot oil. Cook only a few at a time. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired.
