     Flounder Bites with Jalapeño Tartar Sauce

Ingredients
1 Cup mayonnaise
2 Tbsp. chopped shallots
1 Tbsp. chopped jalapeño pepper*
2 Tsp. hot sauce
1 Tsp. lemon juice
1/4 Tsp. salt
1/4 Tsp. ground red pepper
1 8-oz. pkg. hushpuppy mix
3/4 Cup milk
 
1 1/4 Lb. flounder fillets, cut into 1-inch pieces
2 Cups vegetable oil
1 Cup flour

Instructions
Stir together mayonnaise, shallots, jalapeño pepper, hot sauce, lemon juice, salt and red pepper in medium bowl. Cover and chill until ready to serve.
Stir together hushpuppy mix and milk in medium mixing bowl.
Pour oil into large deep skillet to depth of 1/2 inch. Heat oil to 350°F. Dredge fish in flour, then in hushpuppy mix.
Place fish in oil and fry in batches 3 to 4 minutes on each side or until golden. Serve with sauce
