     Swiss and Onion Fondue

Ingredients
1 1/2 Cups finely chopped onion
2 Tbsp. butter
1 Clove garlic, minced
4 Tsp. cornstarch
1 Cup reduced-sodium chicken broth
1 Tbsp. Dijon-style mustard
2 Tsp. lemon juice
3 Cups shredded Swiss cheese (12 oz.)
French bread, cut into 1-inch pieces; roast beef, cut into 3/4-inch pieces and/or broccoli florets
 

Instructions
In large saucepan cook onion in hot butter over medium-low heat about 15 minutes or until onion starts to brown, stirring occasionally. Stir in garlic. Cook 1 minute more. Stir in cornstarch. Add chicken broth, mustard and lemon juice. Cook and stir until mixture comes to a boil. Reduce heat.
Gradually add cheese, a little at a time, stirring until cheese melts. Do not boil.
Transfer to fondue pot; keep warm. Serve immediately with bread cubes, roast beef pieces or broccoli florets.
