     Banana-Chip Muffins

Ingredients
3 Very ripe medium bananas
1/4 Cup canola oil
1 Egg
1 Egg white
1 Tsp. vanilla
1/2 Cup brown sugar
2 Cups all-purpose flour
1 Tsp. baking soda
1/4 Tsp. salt
 
1/2 Cup semisweet chocolatechips
1/2 Cup chopped walnuts (optional)

Instructions
Preheat oven to 375ºF. Coat standard 12-cup muffin tin with nonstick cooking spray.
In medium bowl, mash bananas. Add oil, egg, egg white, vanilla and brown sugar; stir well. In large bowl, whisk flour, baking soda and salt. Pour in banana mixture; stir. Gently mix in chocolate chips and, if desired, nuts.
Spoon batter into prepared muffin cups, filling each two-thirds full. Bake 25 minutes or until toothpick inserted in center comes out clean.
Cool in muffin cups 5 minutes. Remove from cups and cool completely.
