     Chicken Baked in White Wine Marinade

  pinot grigio, unoaked chardonnay

1 cup dry white wine
1 cup vertically sliced onion
1 tsp chopped fresh thyme (or dried)
4 8oz chicken breast halves
1 Bay leaf
2 garlic gloves, minced
salt and pepper to taste

Combine first 6 ingredients in large ziplock bag, seal adn marinate between 4 and 24 hours, turning occassionally.
Preheat oven to 375
Place chicken in 11x7 bakig dish and pour marinade over chicken. Cover and bake at 375 for 20 minutes. Uncover and bake additional 40 minutes or until done. Transfer chicken to platter. Sprinkle with salt and pepper.
