     Roasted Carrots & Sweet Potatoes with Apple Juice

Ingredients
3 Tbs butter
3 c apple juice
1 c dry white wine
1 1/2 lbs carrots
1 1/2 lbs sweet potatoes
salt and pepper to taste
 

Instructions
Boil apple juice and wine in large saucepan until reduced to 3/4 cup, about 30 minutes. Whisk in butter.
Preheat oven to 425.
Peel and cut veggies into 1/2 inch pieces. Place in roasting pan, pour apple juice mix over veggies. Sprinkle with salt and pepper, toss to coat.
Roast until veggies are tender and golden, stirring occasionally, about 40 minutes.
