     Stuffed Green Peppers

Ingredients
4-6 green peppers
1-1 1/2/# ground beef
1 1/2 c. cooked rice
1 finely chopped onion
3 t. mixed middle east spices
3 t ground mint
2 T corn oil
salt
pepper
 
large can tomato sauce

Instructions
Remove seeds and membranes from pepper cases and parboil until nearly tender. To parboil: plunge into large quantity of rapidly boiling water - a little at a time so as not to disturb the boiling - then boil for 3-4 minutes or until slightly softened. Drain, set aside to cool.
Gently saute onion in 2 T oil until soft. Add beef, herbs, salt and pepper. Cook well and drain off all liquid in colander. Add rice and stuff peppers. Spoon tomato sauce in bottom of large pot or pan. and over peppers. You may simmer on top of stove in pot or... Bake for 30-40 minutes in 350 degree oven.
