     Tortelli Di Zucca

Ingredients
500g japanese pumpkin
100g parmesan cheese
1 Egg
salt and pepper
freshly grated nutmeg
breadcrumbs
 

Instructions
Cut pumpkin inot small peices and roast in oven for about 20 minutes on 150 degrees celcius.
In a bowl mix the pumpkin,parmesan, nutmeg and eggs. Let it rest for few hours in the fridge.
Use the fresh pasta recipe and make the ravioli. Boil water with alot of salt and place the ravioli in the pot for about 10 minutes or to your liking.
Serve with sage butter sauce. Place 125g butter into a small saucepan and add a few leaves of chopped fresh sage and melt. Pour over the pasta, add lots of fresh parmesan and serve.
