Heat oven to 300 degrees. Line cookie sheet with aluminum foil and spray foil with nonstick spray.
Mix cinnamon, sugar, and nutmeg in gallon ziplock bag.
In a small bowl, lightly beat the egg white until foamy. Stir the pecans into the egg white, making sure they are well coated. Empty the bowl of pecans into the bag with the spice mixture, seal bag, and shake well.
Spread pecans on cookie sheet and bake for 20 minutes. Serve warm or cooled.
