     Bran Muffins

Ingredients
1 (16 oz) box 40% Bran Flakes cereal
3 cups sugar
5 cups flour
5 teaspoons baking soda
2 teaspoons salt
1 quart buttermilk
4 eggs
1 cup melted buter or margerine
 

Instructions
Mix in large bowl: ceral, sugar, flour, soda and salt.
Blend buttermilk, eggs and butter. Pour over cereal mixture.
Mix well with wooden spoon. Put in covered container. Refrigerate over night. DO NOT STIR AGAIN.
To bake: Place heaping tablespoon of mixture in greased muffin tins. Bake at 400 degrees for 15-20 minutes. Mixture keeps 6 weeks in refrigerator. Muffins freeze well. Microwave 30 seconds. "If you don't refrigerate overnight they don't rise well and look like gross mushrooms." ~Marianne
