     Corn Fritters

Ingredients
2 eggs
1/2 C milk
1 C flour
1 tsp baking powder
1 tsp salt
1 tsp melted vegetable shortening or cooking oil
1 C canned or cooked corn
oil for frying
 

Instructions
Beat eggs. Stir in milk. Sift flour, baking powder and salt together and beat in. Add oil and corn. Mix thoroughly.
Drop by spoonfuls into hot oil.
When golden brown, remove from pan and drain on paper towels.
Serving Suggestions
Serve with hot syrup.
