1 large fryer chicken, cut up and seasoned with salt and pepper
1/2 C chopped bell pepper
1 large onion, chopped
1/2 C chopped green onions
1/2 C chopped celery
4 C water
4 cloves of chopped garlic
2 cups uncooked rice
Instructions
Brown chicken in small amount of oil. Set browned chicken aside. Saute onions, celery, bell peppers, and green onions until wilted. Add water, rice and chicken. Mix well, cover and cook on low heat until rice is done, about 30 mins.
If desired, a 1/2 lb of fried smoked sausage, cut in small pieces, may e added with the chicken.
