     Spanakopita (Spinach Pie)

Ingredients
1/2 cup (125 mL) oil (preferrably olive oil)
500 g frozen spinach (thawed in microwave)
300-400 g feta (crumbled with fork)
2 eggs
one pack filo dough (thawed)
milk or butter for brushing the top
onion, chopped (optional)
salt, pepper, oregano, basil, etc, to taste
 

Instructions
In large bowl, mix spinach and feta together. Stir in eggs and oil.
Grease sides and bottom of rectangular baking pan.
Preheat oven to 180 C or 300-350 F
Unroll filo dough on a cutting board or other clean surface. Fill pan with layers: a sheet or two of filo dough, then a layer of spinach mixture, putting a little oil between sheets of dough to help them stick. Put 2-3 layers on top or whatever you have left over. Bake for 20-30 minutes, brushing periodically with butter (margarine is fine too) or milk; bake until golden-brown and crispy.
Serving Suggestions
It's best fresh, of course, but it's good reheated the next day and you can even freeze it in squares and eat it for lunch the next week.
