     Banana Bread

Ingredients
2 cups (500 mL) all-purpose flour
1 ½ tsp baking soda
½ tsp salt
4 medium-sized ripe bananas
1 cup (250 mL) sugar
¾ cups (170 g) (in States, 1 ½ sticks) butter, melted
2 eggs
1 tsp vanilla extract or two packets of vanilla sugar
½ cup (125 mL) pecans, chopped (optional)
 

Instructions
Mash two bananas well. Mash two partially and put aside. In large bowl, beat sugar, eggs, butter, and vanilla together. Add in well-mashed bananas.
Stir in baking soda and salt. Add in flour by half cups (250 mL) and the two partially mashed bananas alternately until all in. Stir in pecans if desired.
Preheat oven to 180 C (or 350 F. Grease two small loaf pans or square cake pan. Pour in batter and tap pan on counter to remove bubbles.
Bake for about 50 minutes (more or less depending on baking pan) until fork or toothpick inserted comes out clean.
Serving Suggestions
Best warm. Yummy with powdered sugar sprinkled on it.
