     Baked Potato Salad

Ingredients
8 potatoes, sliced
1 lb. Velveeta Cheese
1/2 lb. bacon, cooked & crumbled
1/2 onion, chopped
1 c. mayonnaise
1/4 c. black or green olives, sliced
salt & pepper
 

Instructions
Preheat oven to 325 degrees.
Boil sliced potatoes about 10-15 minutes until tender but firm. Drain.
In a large bowl, mix cheese, onion, mayonnaise, salt, and pepper with potatoes. Transfer to buttered baking dish (about 9X13 size).
Crumble bacon on top of potatoes then add olives. I usually put black olives on one half and green on the other due to a picky family. Bake for 1 hour or until top is slightly brown.
