When I defrost my chicken breast and it is a little frozen, I like to slice the pieces into thin slices. Beat the egg in a bowl. Put breadcrumbs in a pie plate. Dip each piece of chicken in the egg and then the bread crumbs.

Brown the chicken in the olive oil until golden brown. Remove from the pan and sautee the mushrooms in the olive oil or melted butter.

Put the browned chicken in a shallow baking dish, cover each with a slice of swiss cheese and the sauteed mushrooms.

|
|
Melt 1 stick of butter and mix with 3/4 cup of wine. Pour over the chicken and the mushrooms. Bake 350 degrees for 30 minutes.
