Heat oven to 350 degrees. Oil 8x8" dish, cook pasta for 7minutes. It will be partially cooked. Drain,rinse with cold water and drain well. In a medium saucepan, heat 1-1/2 Tbl.of oil on med.low heat.Add onion,cook till tender. Add garlic,cook for 30 seconds. Add tomatoes, salt and bay leaf.
Bring to simmer over med heat and cook until very thick @ 10 minutes. Stir in 1/4tsp.of pepper. Remove bay leaf. In small bowl combine, ricotta, 1cup mozzerella, @1//2 of parmesan, pesto and remaining 1/4tsp.pepper.
Place half of pasta in pan, half sauce, spread ricotta mixture over sauce. Cover with remaining pasta and then remaining sauce. Top with remeaining mozzerella and parmesan. Drizzle with 1/2Tbl.oil
Bake till bubbly @ 30min. Let stand 10minutes before cutting.
