2 cups cooked long grain rice
|
|
1 can black beans, rinsed and drained
|

1/2 cup diced red pepper
|

1/2 cup diced yellow pepper

4 1/2 tsp minced fresh cilantro

3Tbl. olive or vegetable oil
|
|
2Tbl. cider ro white wine vinegar
|
|
2 Tbl. water
|
|
1 tsp. ground cumin
|
|
|

1/2 tsp. salt
|
|
1/2tsp pepper
|

Instructions |

|
In a bowl; combine rice, beans, peppers, cilantro.

Combine remaining ingredients in a jar with tight fitting lid. Shake well. pour over rice; toss to coat.
