     Fassoulada (Bean Soup)

Ingredients
1/2 Pound Navy Beans, Soaked Overnight
1 Onion Chopped
1 Small Can Tomato Sauce
2 Tablespoons Mustard
2 Tablespoons Worcestershire Sauce
2 Tablespoons Parsley
2 Tablespoons Olive Oil
 

Instructions
Rinse beans in cold water then soak them overnight.
In a large stock pot, saute onion, 2 Tbs tomato sauce, mustard, worcestershire sauce, parsley in the olive oil until onion is softened.
Add beans and the rest of the tomato sauce to the beans. Add water to cover.
Simmer for at least 2 - 3 hours, adding more sauce or water as necessary.
