TZATZIKI: Place cuke in strainer to drain. Mash garlic into paste. Combine yogurt, cucumber, garlic and oil and stir. Place in dish. Sprinkle with parsley.
PITA: Place water, oil, salt, then flour and yeast in bread maker on dough cycle. Turn out and divide into 12 pieces. Rest 5 minutes. Roll each into oval about 6 inches wide. Cover with oiled plastic wrap. Rise 30 minutes. Bake in hot 450* oven for 6 minutes. Cover with towel.
Next place a 3-4 lb. Pork tenderloin in a small roasting pan. Rub with mixture of minced garlic, olive oil, and lemon pepper. Roast in 350* oven for 45 minutes or until thermometer reaches 155 degrees.
Now build your gyros. Take a pita and cut one side like a pocket. Fill with thinly sliced pork, tzatziki, some feta cheese, and tomatoes. Serve with Greek olives if desired. Enjoy!
