     Southwestern Chicken and Rice Soup

Ingredients
Chicken
2 cups onion
1 cup grated carrots
2 to 3 stalks celery
1 cup rice
4 chicken bouillon cubes
1 cup picante sauce
1 lb Velveeta
 

Instructions
Boil chicken in water for about 15 min. Add onion, carrots and celery. Remove chicken, shred. Add rice, bouillon, picante sauce and simmer until rice is tender, add chicken. Add Velveeta until melted.
