2 lbs. fresh asparagus spears, trimmed
|

1 med onion (cut into thin wedges)
|

1 med red or yellow sweet pepper ( cut into thin strips)

1 TBSP olive oil
|

1/4 tsp salt
|

1/4 tsp ground black pepper
|
|
1 oz. Gruyere or swiss cheese (shredded (1/4 C)

Instructions |

|
Preheat oven to 400 degrees. Place asparagus, onion, and sweet pepper in a 15x10x1-inch baking pan.

Drizzle with olive oil; toss gently to coat. Spread in a single layer. Sprinkle with salt and pepper.

Roast, uncovered, about 20 minutes or until asparagus is crisp-tender,stirring once halfway through roasting time.
|
|
|
Transfer to serving platter; sprinkle with cheese. Let stand 2 minutes until cheese melts.
