1-2 lbs skinless, boneless chicken breasts
|
|
salt and pepper
|

3 tablespoons evoo
|
|
1 onion, coarsely chopped
|
|
1/2 butternut squash (peeled, seeded, cut into 1-inch pieces) (i use frozen)

1/2 cup golden raisins
|
|
1 tablespoon dried sage
|
|
1 cup apple juice
|
|

Instructions |
|
|
season chicken with salt and pepper. saute in olive oil until done. transfer to plate and keep warm.

cook onion in same pan, scraping up browned bits. stir in squash, raisins, sage, and apple juice. cook until squash is done and sauce is thickened.

|
serve chicken topped with sauce.
