     Hawaiian Chicken

Ingredients
Two whole boneless chicken breasts- cut into cubes
1/2 cup of flour
1/2 cup of coconut (optional)
1/3 cup of vegetable oil
1 tsp salt
1/4 tsp pepper
For sauce: 1 can of pineapple chunks
1 cup of sugar
 
2 tbsp of cornstarch
1/2 cup of vinegar
1 tbsp of soy sauce
1/4 tsp of ground ginger
1 chicken bouillon cube
2 green peppers cut into med/large chunks

Instructions
Coat cubes of chicken with flour and coconut. Heat oil. Brown chicken until crisp-slowly so outside is not tough. Put chicken in 9X13 baking dish. Sprinkle with salt and pepper.
For sauce: Drain pineapple juice into 2 cup measure. Add water to make 1 1/4 cups in saucepan. Combine sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger, and bouillon cube. Bring to a boil. Boil for 2 minutes stirring consistently. Pour over whicken. Sprinkle pineapple and green peppers throughout. Bake 50-60 minutes to desired.
