Chop chicken and dice onion. Scramble eggs. Add chicken and onions. Cook and then remove from pan.
Add 2 T veggie oil to rice and stir until coated. When oil has dissolved add 1/4 c chicken broth. Once broth has been absorbed add in remaining 1/4 c broth.
Add soy sauce and mix. Add chicken and veggies and stir. Add desired amount of salt and pepper.
