2 lbs about 6 medium potatoes, peeled and thinly sliced
3 TBSP butter or margarine
1/4 C chopped onion
3 TBSP all-purpose flour
1/4 tsp ground black pepper
1 can evaporated milk
1 C water
1/3 C grated parmesan cheese
11x7 baking dish

Instructions
Put potatoes in large saucepan. Cover with water, bring to a boil. Cook at
medium heat for 3-4 minutes, drain and set aside.
In same pan heat butter over
medium heat add onion, cook, stir occasionally for 1-2 minutes or until onion is
tender. Stir in flour, salt and pepper.
Gradually stir in evaporated milk and
water.Cook stirring constantly, until mixture comes to a boil. Remove from heat.
Grease your pan, arrange the potatoes in it, then pour milk mixture over
potatoes. Sprinkle with Cheese. Bake for 25-30 minutes at 350 degreees or until
potatoes are tender and cheese is light golden brown.
