     corn and bacon quiche

Ingredients
3 sheets frozen shortcrust pastry, thawed
4 rashers rindless bacon, finely chopped
5 eggs
1 1/2 cups grated cheese
1 cup thickened cream
1 cup milk
310g can crn kernels, drained
4 green onions, thinly sliced
 

Instructions
preheat oven to moderate, (180c). lightly grease 2x24cm loose based flan pans. join 11/2 pastry sheets together, line one pan and trim the excess. repeat with remaining pastry and pan. chill for 10 minutes.
heat a frying pan on high. add bacon and cook for 2-3 minutes until golden. remove from the pan.
place flan pans on 2 baking trays. line pastry case with baking paper then fill with dried beans,rice or pasta. bake for 10 minutes. remove paperand fillig. bake for a further 5 minutes. cool.
meanwhile, in a large bowl whisk together eggs,cheese,cream and milk until combined. stir in corn,bacon and onions. season to taste. pour mixture evenly into pastry shells. bake for 30-35 minutes until set.
