     Cheddar Bacon Baked Potatoes

Ingredients
5-6 Potatoes
1 block (1 lb.) Cheddar cheese
1 bag shredded Mexican cheese
1 can cream of chicken soup
Broccoli spears
Bacon
1 stick butter
 

Instructions
The potatoes are baked, cut up, and combined in a baking dish with chopped broccoli, bacon, cream of chicken soup, and butter with cheeses on top. Bake the Potatoes, until they are done Boil or steam the broccoli until it is soft (I use frozen broccoli) Fry the bacon until crisp.
Once the Potatoes are done, cut them up into bite-size pieces. Cut the broccoli, bacon and cheddar cheese into bite sized pieces. Put all ingredients that you just read into a bowl and mix them together with the cream of chicken soup. In a baking dish, cut up the stick of butter and lay it along the bottom of the dish. Then add all the contents in the bowl into a baking dish. Add the shredded cheese on top of the potato mixture.
Then let it bake until it's light golden in color. at 350 for 15-20 minutes. Let it sit for 5-10 minutes before serving. Use as much bacon as you want. It all just depends on your taste.
This makes a lot!...adjust accordingly for your family, and have a HUGE bowl and pan. If your potatoes are large, I would use 2-cans cream of chicken soup. I will make this again, but will adjust cooking for two.
