Ingredients
1 C Ground Pork
3 C Ground Chicken
1/2 lb Jumbo Shrimp
1 C Jelly Noodles
2 Tblsp Garlic, chopped
2 Tbsp Thin Soy Sauce
1 tsp White Pepper
2 Tblsp Fish Sauce
1/8 C Cilantro, chopped
 
1/8 C Green Onions, chopped
1/2 C Onion, white or yellow,chopped
Bamboo Skewers, soaked overnight.
SAUCE:
1/8 to 1 tsp Sirachi Chili Sauce (very spicey)
1/4 C Vinegar
1/2 C Sugar
1/4 tsp Salt
2 Tblsp Ground Peanuts (Unsalted)

Instructions
Soak Jelly Noodles in cold water for 1/2 hour. Cut noodles into 1 " threads. Mix all ingredients (Except Shrimp) together. Chill.
Cut lengthwise in half. Place on skewers lengthwise. Pack Meat Mixture around shrimp in 'hotdog-like' fashion. Chill several hours, preferably overnight. Deep Fry in 2 inches oil till golden brown. Place on paper to drain.
Sauce: Mix all but Peanuts in Small sauce pan. Bring to a Boil. Boil 2 Min. Remove from heat. Cool. Add Ground Peanuts before serving.
