Cut Pineapple in half, lengthwise.
Scoop out center to make Boats.
Dice fruit.
Heat oil in wok.
Add Chicken and Sausage.
Cook 3-5 Min.
Add Rice, Shrimp, Pineapple, Fish Sauce, Sugar & Curry.
Stir fry til Hot.
Mound mixture into Boats. (Boats should be room temperature.)
Beat eggs with 1 tsp water.
Fry in pan, swirling to spread egg.
Should resemble a pancake.
Roll up and slice.
Garnish Boats with Sliced Egg, Bell Pepper and Cilantro.
