Ingredients
1 cup rolled oats
1 cup spelt flour
1/4 cup brown rice flour
1/4 tsp. baking powder
1/4 tsp. sea salt
1/2 cup safflower oil
1 cup maple syrup
1/4 tsp. vanilla
1/4 tsp. almond extract
1 Tbl. egg replacer
1 cup vegan chocolate chips
Instructions
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper; set aside.
In a large mixing bowl, combine the oats, flours, baking soda, and salt. Add the oil, 1/4 cup of water, the maple syrup, vanilla and almond extracts, and egg replacer and stir well to combine. Fold the chocolate chips into the batter.
Spoon tablespoons of batter onto a large baking sheet and space them 3 inches apart. Flatten the batter with the bgack of a wet spoon. Bake for 10-15 minutes, until lightly browned. Remove the cookies from the baking sheet and let cool on wire racks.
