     Tortellini with Spinach

Ingredients
1 bag tortellini in blue bag (3 cheese or spinach variety)
I lb. ground round
Jar Ragu Light Alfredo Parmesan sauce
Bag baby spinach (or frozen package)
1 TBS olive oil
medium onion, sliced
can of mushroom stems and pieces
1 tsp. italian seasoning
1 tsp garlic powder
 
1 TBS parmesan cheese
salt and pepper to taste

Instructions
Cook tortellini according to package directions –drain and set aside.
In large skillet, brown ground beef until just barely cooked – drain off fat. Add onion and sautee slightly – add mushrooms, Italian seasoning, and garlic powder – mix in tortellini and as much of the alfredo sauce as you like. Add salt and freshly ground pepper to taste.
In separate skillet, warm olive oil and sautee spinach in it until spinach wilts. Add spinach in with tortellini and mix together lightly. You can serve it right then from the pot or put it in a casserole dish with the extra parmesan sprinkled on top and keep it warm for later.
You can add anything you like to the mixture – such as black olives, green or red bell peppers -- use shrimp or crabmeat instead of ground beef – use ham or bacon to make it a carbonara – use your imagination.
