     Smoked Salmon Chowder

Ingredients
3 tbls butter
3/4 cup chopped onion
1/2 cup chopped celery
1 tsp fresh chopped garlic (can substitute with garlic powder)
2 cups diced potatoes
2 cups carrots diced
2 cups chicken broth
Salt to taste
Ground black pepper to taste
 
1 tsp dried dill weed
3 cups flaked smoked salmon or 1.5 cups chunked fresh salmon and 1.5 cups flaked smoked salmon
1 (12oz) can fat free evaporated milk
1 (15oz) can creamed corn
1/2 lb cheddar cheese, shredded
1 tsp cayenne pepper (optional)

Instructions
Melt butter in a large pot over medium heat. Saute onion, celery, and garlic until onions are tender. Stir in potatoes, carrots, broth, salt, pepper, and dill. Bring to a boil, and reduce heat. Cover and simmer 20 minutes. At 10 minutes stir in salmon.
Stir in evaporated milk, corn, and cheese. Cook until heated through.
Can choose to leave out cheese if wanting to make healthier.
Serving Suggestions
Serve with bread and crackers
