     Vadalia Onion Soup

Ingredients
4 to 5 large Vadalia onions, sliced
3 Tbl butter or margerine
1/4 tsp. pepper
1 Tbl flour
4 cup beef broth
1 12/ cups water
1 bay leaf
8 slices french bread, toasted
1/2 cup shredded swiss cheese
 

Instructions
In a dutch oven, saute onions in butter until lightly browned. Sprinkle with pepper and flour. Cook and stir for 1 minute.
Add broth, water, bay leaf; Simmer for 30 to 40 minutes, stirring occasionally.Remove bay leaf.
Ladle into 4 oven proof bowls, top with bread and cheese.
Bake on 400 for 10minutes or until cheese is brown
