     Shrimp Puffs with Soy Garlic Sauce

Ingredients
1 lb. shrimp raw, peeled, deveined
2 slices bacon, diced, raw
1/3 cup finely chopped green onion
1 1/2 tsp. fresh ginger, grated
1 cup all purpose flour
1 cup water
3 tbl. butter
1/2 tsp. sugar
2 large egg whites
 
1 large egg
SAUCE
1/4 cup soy sauce
2 tbl. chopped green onion tops
2 tbl. seasoned rice vinegar
1 tsp. hot sauce
1/2 tsp. dark sesame oil

Instructions
Chop up raw shrimp in food processor. Cook bacon until crisp. Remove bacon from pan, drain. Cook shopped shrimp in bacon grease for 3 minutes. Add onions, saute for 1 minute, add ginger, saute 1 minute, remove from pan.
In saucepan, combine water, butter and sugar. Whisk. Stir constantly with a wooden spoon. Reduce heat to low, whisk in flour, stiring until it pulls away from the side of the pan. Remove from heat.
Add egg whites and egg, one at a time. Beat with an electric mixer at medium speed until smooth. Gently stir in shrimp mixture. Drop combined mix by tablespoon onto a coated baking sheet. Bake at 425° for 10 minutes. Reduce heat to 350° and bake for an additional 10 minutes.
Sauce - Combine all ingredients. Serve with Shrimp Puffs.
