wash chicken and submerge in pot of water with half the onion cut up and a palm full of whole peppercorns and a palmful of salt. let boil until chicken is falling of the bone.

Cut cup all other veggies and skin the potatoes.
Once chicken is cooked strain and save broth. using the same pot saute veggies (not potatoes) to semi soft ( I use a small amout of the broth to simmer the veggies instead of oil or butter.)
while the veggies are cooking take chicken off the bone and save. (discard the bones, onion and pepper corns.

Once the veggies are soft add the chicken, potatoes and broth bring to a boil. Once potatoes and veggies are soft let simmer until ready to eat.

I like to cook the noddles or rice seperate for storing. This soup freezes geat and you always have lots of leftovers.
