     Mini chives popovers

Ingredients
1 tbsp unsalted butter melted, pluse additional for pans
2 cups all-purpose flour
1 1/2 tsp salt
3/4 tsp pepper
1 tsp cumin
2 pinches sugar
4 large eggs room temp
2 1/2 cups whole milk at room temp
1 cup fresh chives
 

Instructions
Perheat oven to 450F and arrange rack in middle of oven. Useing 2 12-cup nonstick mini-poppover pan, butter 8 cups per pan, spacing to allow for even baking.
Whisk together flour salt, pepper cumin & sugar in large bowl. whisk together eggs, milk chives and butter in a medium bowl. add egg mixture to flour mixture, stirring until just combinded. divide batter between prepared cups, filling them three- quarters full.
bake 10 min. reduce oven temp 375F and bake until puffed and golden brown about 20 min . remove popovens from pan and serve immediatly (can be kept warm in 200F oven up to 30 min)
