     Chicken Tenders with Tangy Maple Dressing

Ingredients
2 lbs chicken tenders
salt and pepper
1 cup flour
2 eggs beaten
1 cup plain bread crumbs
1 cup finely chopped pecans
1/2 teaspoon nutmeg
1 orange, zested
1/4 cup maple syrup
 
1/4 cup barbecue sauce
1/4 cup EVOO
Romaine lettuce, chopped
Small tomatoes
Carrots

Instructions
Heat 1 1/2 to 2 inches of oil over medium heat. Season chicken tenders with salt & pepper. Put out 3 shallow dishes and place the flour in one and the beaten eggs in another dish. In the 3rd dish, combine bread crumbs with the ground pecans, nutmeg and orange zest. Coat tenders in flour, then egg, then bread crumb mixture. Fry tenders 6-7 minutes. Drain the tenders on paper towels.
Combine maple syrup, barbecue sauce and the juice from the orange in a bowl. Whisk in the olive oil and season with salt & pepper.
Combine lettuce, tomatoes and carrots (or your own mixings) in a large bowl or serving dish. Toss with 3/4 of the dressing. Season with salt & pepper. Top the salad with chicken tenders and drizzle the remaining dressing on top.
