     Turkey Dressing

Ingredients
1 egg
1 finely chopped medium onion
60 ml fresh parsley
15 ml fresh sage, rosemary and thyme
10 ml ground pepper
15 ml salt
turkey giblets
500 g fresh ground pork
3/4 loaf white bread cub into cubes
 

Instructions
Mix onion, egg, parsley, sage, rosemary, thyme, ground pepper, and salt in extra large mixing bowl. Puree giblets in food processor until they resemble a thick paste. Add to egg, onion and spice mixture. Mix well. Add bread cubes to mixture 1/3 at a time. Mix well after each addition. Mix in ground pork small pieces at a time until completely mixed in. Stuff mixture into neck end of Turkey. Use string and truss to keep stuffing from falling out while cooking. Do not stuff body cavity.
Cover and cook 425F for 30 minutes. Reduce heat to 325F and continue to cook for an additional 30 minutes. Remove cover and cook until done. Approximate cooking times at 325F- 2-5 kg (1-2 hours) 12-18 kg (2-3 hours)
