     Tropical Muffins with Coconut and Macadamia

Ingredients
1 1/3 cup all purpose flour
1 cup oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup mashed banana
1 cup buttermilk
1/2 cup brown sugar
2 tbl. oil
 
1 tsp. vanilla
1 large egg
1/2 cup crushed pineapple, drained
1/3 cup flaked coconut
3 tbl. macadamia nuts, finely chopped, toasted
TOPPING - 2 tbl. coconut;
1 tbl. macadamia nuts, chopped, toasted
1 tbl. sugar
1 tbl. oats

Instructions
Preheat oven ۫ 400 Combine first 5 ingredients in large bowl. Make a well, combine next 6 ingredients in seperate bowl, pour into well, stirring just until moistened. Stir in last 3 ingredients. Spoon batter into 12 muffin cups, coated with cooking spray.
Combine topping ingredients in small bowl. Sprinkle evenly over pre-filled muffin cups. Bake for 18 minutes or until muffins spring back when touched lightly. Immediately remove muffins to cooling rack.
