2 Packages frozen chopped broccoli or chopped spinach
1 can cream of chicken soup or cream of mushroom soup
1 egg (optional)
1/2 cup mayonnaise
1 Tbsp lemon juice
3/4 cup grated cheese (your choice of flavor)
Instructions
Cook frozen vegetables for 5 minutes. Drain thoroughly and pat dry with a paper towel. Blend soup, egg if desired, mayonnaise, lemon juice until they form a smooth sauce. Stir 1/2 cup of the grated cheese into sauce. Add vegetables and mix well.
Pour into 1 1/2 qt casserole dish. Sprinkle remaining cheese on top and bake for 30 minutes at 350 degrees. Let stand for at least 5 minutes before serving.

Suggestions
For variety, spice with 1 tsp curry powder. For a main dish, add 1 cup pureed cooked chicken or ham.
