     Eggplant Casserole

Ingredients
1 Eggplant peeled & cubed
4 Tbls. Butter or marg
2 Tbls flour
1 cup Sour Cream, 2 tsp chicken boullion
1 can green lima or 10 oz. box Fordhock cooked
1 cup Fried onion from can
 

Instructions
Sautee eggplant in shortening or butter till lighly brown. Add 2 Tbls flour, sour cream and boullion. Add the limas. Put in casserole and put french fried onion rings on top. Bake 350 degrees for 25-30 min.
