     Roasted Salmon (NY Times)

Ingredients
4 T. olive oil or butter
salt and pepper
1 t. basil
lemon wedges for serving
1 t. thyme
1 salmon (1 1/2 lbs)
 

Instructions
Preheat oven to 475. Put oil/butter and half the herb in a roasting pan large enough to hold the salmon and put in the oven for about 5 minutes, until the herbs begin to sizzle.
Add salmon, skin side up. Roast 6 minutes. Remove from oven and peel off skin. Sprinkle with salt and pepper; flip and sprinkle with salt and pepper. Roast another 4-6 minutes. Remove from other and garnish with remaining herb and lemon.
