Place chicken in a bowl; sprinkle with salad dressing mix. In a skillet, saute mushrooms (if desired) and onion in oil for 3 minutes. Add chicken; saute for 6 mins or until chicken juices run clear.
Spoon mixture onto roll bottoms; top with cheese. Broil 4 in. from heat for 4 mins or until cheese is melted. Replace tops.
