Coat jellyroll pan with cooking spray. Boil water. Reduce heat to low; grad. stir in cornmeal. Stir in next 5 ingred.
Cook stirring until thickened, 5 min. Spread in pan. Refrigerate until cool and set, at least 20 min.
Position rack 4" from heat source. Preheat broiler. Cut Polenta into 2" squares: halve diagonally. Arrange on ungreased jellyroll pan. Comb. oil & oregano, brush over triangles
Broil until lightly browned, 1-2 min. Top with Moz.; broil 1 min. Top with peppers or basil if desired.
